Abstract

Eating habits and product consumption are determined by the economy, culture, socioeconomic profile, fashion and elements of a social nature. Knowing these factors and understanding consumer preference for animal products and their perception of environmental impact, well-being, quality and health is essential to understand, expand and assist the production chain, however, there is little research in this area that involves the entire Brazilian territory. Therefore, the objective of the study is to identify the profile of Brazilian consumers in relation to the consumption of meat of different animal species and other products of animal origin. As well as assessing the population's knowledge of the animal production chain and their perception of the environmental impact and animal welfare in the production of food and products. In addition to checking the perception about the generation of quality products and beneficial to Human health. To conduct the research, at least 1576 consumers from all regions of Brazil will be studied through an online questionnaire using the Google Docs system. The questions will be multiple choice and discursive and the subjects will be grouped into five sections, being: free and informed consent term; consumer profile; meat consumption; products of animal origin and sustainability in livestock; healthy eating and changes in eating habits. After data collection, statistical analysis will be performed using the Chi-square test and Fisher's exact test. (AU)
