Abstract

There is a need in the world as well as in Brazil to determine the perfect conformation, as well as the degree of ripeness of fruits and vegetables, thus ensuring the quality of the product, adding to this development market value. To achieve this result, equipment for this activity will be developed, using combined forms of ultrasound techniques associated with digital image analysis techniques. The equipment continuously, will perform the segregation of individuals in non-compliance with the standards stipulated by the customer. Image analysis techniques are extremely important for spatial localization, determining the shape and size of fruits and vegetables in the selection system, enabling the determination of the points to be used by the ultrasound, since, for determining the water concentration and the sugar content of the fruit is determined by the variation in the percolation time of the wave in the material during the process, using the washing as a coupling. This equipment is expected to perform a better selection of fruits and vegetables, adding value to the national product aiming at its qualification, seeking to meet international standards. In addition, by genetic selection to assist in the development of parameters for the improvement of culture. As it is an innovative project, it ends up impacting the company's technological development, as well as prospecting innovation businesses in a market that does not exist in Brazil.
