The objective of this project is to establish a novel research line in Brazil, related to the bioavailability studies of nutrients in food samples. In these studies, Caco-2 cells will be employed in order to predict in vitro the effective absorption by human organism of the nutrients presents in the food. The Caco-2 cells monolayers constitute a well-established intestinal epithelial model, extracted from human colon (small intestinal), widely used in the pharmaceutical industry to predict the absorption of orally administered drugs. This cell model, in the last ten years, has been shown a remarkable application in the nutrition area for the prediction of nutrients that are effective absorbed by the human organism. Bioavailability studies employing the cell model has been widely developed in many countries but not in Brazil, where few studies related to the bioavailability of nutrients has been done. There are some studies that aimed to the determination of the bioavailability fraction of organic components present in food samples, but there are no published papers concerning to the bioavailability fraction of the inorganic constituents in Brazil. Thus, this project has the main goal of study the bioavailability of inorganic nutrients present in food samples, employing the cell model, the Caco-2 cells. (AU)
