Abstract

Bee pollen has become another option for supplemental nutrition in food. From the 90's began studies for the effective analysis and verification of the therapeutic potential of pollen, the main difference being a source of proteins, lipids, minerals, antioxidants and vitamins. Among the oxidants are vitamins: vitamins A, C, E and b-carotene, which have the ability to stabilize free radicals, responsible for many degenerative diseases of aging characteristics, which can either be from the external environment or as a natural result of human metabolism. This study aims to obtain analytical data on antioxidant vitamins dehydrated bee pollen in southern Brazil, in order to obtain new information about this product, since the literature data are scarce and mostly from other countries. For this sample will be obtained dehydrated pollen from different botanical origins in apiaries located in southern Brazil, and first performed an evaluation of such apiaries, beekeepers need to be registered in the responsible Brazilian Confederation of Beekeeping (CBA). For b-carotene, vitamins A and E will be used high performance liquid chromatography (HPLC). Vitamin C will use the titration method. There will also be carried out pollen analysis and proximate composition. (AU)
