Abstract

The main risk factor for poultry production is the control of Salmonella spp. infections. The environment where the birds are created is conducive to contamination by this pathogen, causing risks to public health when present in meat and eggs, generating insecurity in the final consumer. The technique recommended by the Ministério da Agricultura Pecuária e Abastecimento (MAPA) for diagnosis of this pathogen is the bacteriological examination. Despite being a reliable and effective, the delay of up to five days to get the final identification is the major disadvantage. In this project we will use three Salmonella serovars (Enteritidis, Typhimurium e Heidelberg) to infect artificially samples of chicken meat chilled for later analysis by bacteriological methods, molecular and immunomagnectic separation associated with bacteriophage. With this research we propose a method of diagnosing Salmonella spp. faster than those available and equally sensitive. We will compare the phage detection with microbiological methods and PCR and then can infer the advantages and disadvantages of each technique. (AU)
