Abstract

The Brazilian projections of beef production indicate intense dynamism in the coming years, especially after the approval of agonists of beta-adrenergic receptors (A²A) awarded by the MAPA in June 2012. Zilpaterol hydrochloride (CZ) is a synthetic compound belonging to the A²A group which improves feed efficiency increasing the meat production per area unit. Cattle supplemented with CZ have a higher rate of weight gain, feed conversion and hot carcass weight, dressing percentage and deboning. However, the amount of intramuscular fat and subcutaneous fat thickness can be reduced or not and meat shear force (FC) would be increased on animals treated with CZ, even if the meat passed through maturation process. Thus, electrical stimulation of carcasses can be an alternative to reduce the FC for animals supplemented with CZ. However, much of the data in the literature CZ comes from experiments conducted abroad, particularly in the United States, which maintains Bos taurus in feedlot for approximately 140 days. In Brazil, the feedlots average time is 84 days and most of the cattle is zebu (Bos indicus). There is only one experiment evaluating the CZ performance and carcass characteristics on finishing Nellore cattle, which is conducted by our group (LANNA et al., 2009). However, animals were fed for 47 days (6 mg / kg DM CZ), and the diet contained 60% corn silage and high protein content (15.7% DM). There is no data in the literature for meat quality of zebu cattle treated with CZ. This project aims to evaluate the effect of CZ (0, 20, 30 and 40 days) and the feedlot period (90 and 120 days) on performance, carcass characteristics and meat quality of Nellore bulls fed with high concentrate diets.
