Application of pre-treatment in cold pressing of pulp and almond pequi (Caryocar brasiliense Camb.): evaluation of yield and chemical composition of lipid extract

Abstract

The development of alternative methods for extraction of bioactive compounds in order to eliminate or reduce the use of organic solvents is a global trend. Besides the focus on sustainability, these methods aim to increase the quality of the final product. Thus, this project aims to evaluate the application of different pretreatments (enzymatic and ultrasound) combined with cold extraction of fat-soluble extracts of pulp and almond of pequi (Caryocar brasiliense Camb.). The choice of pequi as raw material for the present study took into consideration that it is a fruit whose pulp is rich in fat-soluble bioactive compounds, mainly carotenoids. Moreover, the culture of pequi is a source of income for the population of the Brazilian Cerrado, and it is further processed, most often, in a handmade way. Hence, in this study, will be optimized extraction methods and evaluated the oily extracts obtained with respect to the composition of carotenoids, quantification of total phenolic compounds and other physicochemical characteristics (color, unsaponifiable matter, free fatty acids and peroxides). Solid waste from the extraction processes will also be evaluated for their chemical composition and microstructure. It is expected, from the results, to obtain high quality products, reducing the use of solvents in the extraction process, which can be used by the food and pharmaceutical industries, and add value to typical fruits of the Brasilian flora.
