Abstract

The change in the composition of the meat by providing selenium can add value to the final product and improve the nutritional quality for the consumer. On this way, the general objective of the study will be to determinate the effect of supplementation of different levels and sources of selenium in Nelore cattle diet on animal performance and meat quality and its nutritional value. For that will be used 63 Nelore bovines will be divided in 7 groups, with 9 animals per treatment, as described: (C) - control without additional supplementation of selenium; (SeO1) - Control + 0.3 Se / kg DM in the form of selenium yeast; (SeI1) - Control + 0.3 mg Se / kg DM in the form of sodium selenite; (SeO2) - Control + 0.9 mg Se / kg DM in the form of selenium yeast; (SeI2) - Control + 0.9 mg Se / kg DM in the form of sodium selenite; (SeO3) - Control + 2.7 mg Se / kg DM in the form of selenium yeast; (SeI3E) - Control + 2.7 mg Se / kg DM in the form of sodium selenite. With this design, it is expected to increase the nutritional quality of beef meat, establish the best level of supplementation and the most appropriate source for both organic selenium supplementation as to lower cholesterol.
