Influence of suckling and weight slaughter in carcass and meat caracteristic of crossbred kids

Abstract

The objective of this study was to evaluate the influence of suckling and slaughter weight on carcass characteristics, physico-chemical, sensory and fatty acid profile in meat goats. The experimental design will be completely randomized in a factorial 2x3 + 1, two rearing systems (without milk - WOM and with milk - WM), three slaughter weights (20, 30 and 40 kg), plus the additional treatment (witness). Will be used 112 crossbred goats, males and females. The experiment will be conducted at UNESP - Faculdade de Medicina Veterinária e Zootecnia, Campus de Botucatu/SP, in the production area of goats, located at Fazenda Experimental Lageado. After delivery, the goats received postpartum care, then weighed and identified. will be used artificial feeding on natural milk, divided into daily meals and administered in individual bottles. The branny experimental diet consisting of hay and concentrate, will be provided during the experimental phase. To reach slaughter weight, the goats will be slaughtered in commercial abattoir to obtain the carcasses. In the flesh the physicochemical and sensory characteristics: moisture, ash, fat, protein, pH, color, weight loss by cooking and shear strength, aroma, flavor, tenderness, juiciness, chewiness and the profile of fatty acids and indices: É3 (omega 3), É6 (omega 6), CLA (conjugated linoleic acid), saturated fatty acids (SFA), monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFAs) and the reasons É6/É3, MUFA/SFA, PUFA/SFA. The data collected will be analyzed using the SAS software (Statistical Analysis System) (version 9.4) by applying the GLM procedure (analysis of variance). Comparisons between the rearing systems will be done by F test and slaughter weights will be studied through regression (P 0.05). (AU)
