Abstract

The main purpose of this work is to improve the process of flat-bed scanner calibration in order to be used as an instrument of measuring the peel and pulp colours of papaya fruits (Carica papaya L.) 'golden'. Once obtained the digital images of its peel and pulp during the whole ripening process, image filters will be build in order to separate the parts of the image that are of importance. Finally, ripening non-linear curves will be adjusted to the obtained data.
