Abstract

The non-invasive and/or destructive techniques have being used worldwide very successfully for determining the quality of produce. Among these techniques, the near-infrared spectroscopy (NIRS) is a tool that can be used to improve the process of sorting, classification and, consequently, the quality of the final product. As advantages, this technique is notable for its speed, not destructive, be relatively inexpensive and provide automation of quality control in the packaging houses and food industries. The NIRS is used in Brazil in a multitude of processes, mainly to determine the chemical composition, however this technique has not being used fresh products in order to determining its quality. The study aims to use the NIRS as a non-destructive method for the determination of soluble solids and total anthocyanins in fresh jaboticabeira fruits.(AU)
