Abstract

Brazil stands out in broiler production is emerging as a competitive country in the sector, despite that the country should follow the rapidly changing market, where consumers than the price charge quality. Factors related to the production of broiler chickens to thermal comfort and the bed directly influence the quality of the meat both physical-chemical and microbiological. The aim of this study is to evaluate the influence of temperature and reuse of bed in the microbiological and physical-chemical meat chicken. Will be used 500 male chicks a day old Cobb®, which will be created for 42 days, 250 birds distributed in a chamber, which will be created in thermal comfort and 250 birds in conventional warehouse, at room temperature, subject to changes in climate. In both facilities, half of the birds will be created on new bed of wood shavings and the other half on reused litter treated with lime. The animals will be slaughtered at 21, 35 and 42 days old. Will be evaluated performance indices such as weight gain, feed conversion and feed intake, carcass yield and cuts, the physico-chemical and microbiological analysis of meat chickens, the birds of the microbiota.
