Abstract

The proteomics is the study of the expression of the proteome of an organism, or the outcome of the expression of their genes, which allows us to understand the structural and functional effects caused by factors environment, including nutrition and in this case, probiotics. The two-dimensional electrophoresis, which combines separation of proteins according to their isoelectric point and, by its molecular weight, followed the identification of proteins by mass spectrometry is used for the method further studies proteomics. The electrophoresis in denaturing gradient gel (DGGE) is a separation method based on differences in electrophoretic behavior of denaturation of DNA fragments chain twofold. The DGGE is a powerful technique of genetic analysis that can be used to directly detect modification of a single base and polymorphisms in genomic DNA, DNA amplified DNA and clone PCR. This technique will allow tracking of bacteria in the intestines of fish and possible changes in intestinal flora caused by probiotic supplementation. (AU)
