Abstract

Brazil is the third producer and second exporter of turkey meat on the world. Ensuring the safety of products derived from poultry production is a major challenge, due to the slaughter technology itself, which subordinates the flesh to numerous opportunities for microbial contamination. The meat products are excellent substrates for various micro-organisms and may be involved in the spread of pathogens that cause diseases to humans, such as Escherichia coli and Salmonella spp. A resource used to assess the microbiological quality of meat, is the research of micro-organisms indicators for demonstrating the sanitary conditions during production, processing and storage. In order to assess the hygienic and sanitary conditions of frozen carcasses of turkeys purchased at retail, shall be collected 60 carcasses, which will be submitted to the quantification of micro-organimos heterotrophic mesophilic, psychrotrophic, Staphylococcus spp., Coagulase positive Staphylococcus and Staphylococcus aureus, to determine the most probable number of coliforms, fecal coliforms and Escherichia coli and also to research and typing of bacteria of the genus Salmonella, as well as identify, in vitro, the most effective antimicrobials against potentially cultures. Samples shall be taken in its original container and taken to the Food Analysis Laboratory Animal and Water, Department of Veterinary Preventive Medicine, Universidade Estadual Paulista - Jaboticabal Campus. This study contributes to the national survey which is scarce in relation to the subject and stimulates further research in this field.
