Abstract

The Southeast region of Brazil has increased the interest in the production of goat meat and milk, promoting the market expansion. The fact that ruminant meat and milk are source of saturated fatty acids leads to an obstacle in marketing these products due to the cardiovascular diseases caused by this type of fat, considering that the modern consumer is increasingly worried about and looking for food that promotes health benefits. Thu, it's essential to establish strategies to manipulate the fatty acid profile in meat and milk. The vegetable oils, that are rich in unsaturated fatty acids, are being used in ruminant diets to increase the energy density and improve the fatty acid profile of the products. Thus, this project aims to evaluate the inclusion of soybean, sunflower and canola oils in diets of Anglo Nubian goats and kids and their effects on milk and meat production and on the fatty acid profile of these products.
