Abstract

The interest of using COX-2 (cyclooxygenase), PGE2 (prostaglandin E2), TNF-± (tumor necrosis factor), and NO (nitric oxide) inhibitors to treat inflammatory diseases is increasing. Due to significant production and consumption of beans in Brazil, it is important to study the presence of these inhibitors in Brazilian varieties of beans. The objective of this project is to verify the effect of different concentrations of bioactives peptides obtained from enzymatic hydrolysis of in natura and germinated common bean and cowpea flour on the proliferation and modular properties of the oxidative response (NO, COX-2, iNOS), and the inflammatory response (TNF-± e PGE2)) using a murine macrophages model. This verification should be realized at University of Illinois at Urbana-Champaign under supervision of Dr. Elvira G. de Mejia, who is studying for over 15 years the bioactives compounds of food with benefic properties to human health.
