Abstract

The nutritional and functional potential of agro-industrial waste has increased over the years. Brazilian native fruits such as passion fruit has its peel rich in fiber and phenolic compounds. The consumption of such industrial byproduct is directly related to decreased incidence of chronic diseases. The fermentation of dietary fiber favors microbial modulation, in particular increase of colonies of beneficial lactobacilli and bifidobacteria. Among the final products generated by fermentative process are the chain fatty acids (SCFA) which, besides being used as an energy source for enterocytes has anti-inflammatory action. Phenolic compounds present in these fed are excellent natural antioxidants, which can improve antioxidant status in vivo. In addition these compounds may also present among other effects, anti-inflammatory action. In this regard, the evaluation of passion fruit peel fermentation in vitro, could help identify optimal concentration to promote microbial modulation and increased production of SCFA. As well as, make it possible to evaluate the bioavailability of certain phenolic compounds present in the food matrix and the effect of the intake of the peel in the modulation of inflammatory mediators present in ulcerative colitis.
