Abstract

The peptidases are enzymes that hydrolyze polypeptides in peptides and / or amino acids. It has great importance in the global scenario of enzymes, 60% of the more enzymes sold, this prominence is due to its wide applicability in many industrial sectors, such as pharmaceuticals, cosmetics, food, leather, detergents and bioremediation. The peptidases may be obtained from animals (tissues, glands and poisons), plants (fruit, seeds and latex) and micro-organisms (fungi, yeasts and bacteria), of which the latter stand out as the main source producing peptidases about 40% of peptidases commercially available. The micro-organisms produce peptidases through fermentation bioprocesses, which may be under water or solid, may be secreted or intracellular, peptidases in this study will be produced by submerged bioprocess in which the nutrients and micro-organisms are spread uniformly in a liquid medium. The fungi used for the production of peptidases will be, Eupenicillium javanicum and Myceliophthora sp, peptidases produced by these fungi will be characterized biochemically using peptide substrates (FRET). Then the peptidases will be applied in the production of peptides by hydrolysis of proteins derived from cow's milk and egg. There are several studies, which demonstrated that these peptides made from proteins derived from milk may have biological activity, so called bioactive peptides. The bioactive peptides may exhibit antimicrobial activity, citomodulatory, immunomodulatory, hypotensive, antioxidant, opioids and others. In the present study, we also will produce peptides by hydrolysis of milk proteins and egg, these protein hydrolysates will have their peptides purified and characterized by determination of the primary sequence, then this form, the peptides will be tested for antimicrobial activity, antitumor and hypotensive .
