Abstract

The maize (Zea mays L.) is an important source of food, forage and processed products for industry. The production and mycotoxins occurrence in cereal grains is considered dependent on the condition of the grain at harvest, care in drying and quality of grain storage facilities. Contamination of food with mycotoxins cause great concern due to their potential genotoxic and carcinogenic, and still your possible additive or synergistic effects that may result from their combination in a single food. The implementation of maximum levels for food products has forced a more demanding quality control and for this control emerged a need to develop effective methods for the detection and quantification of mycotoxins. In this context, as innovation will be developed and compared two multiresidues methods based on different procedures for sample preparation QuEChERS and SPE online will be developed and compared using liquid chromatography with electrospray ionization tandem mass spectrometry (LC-ESI-MS/MS) for determination of five mycotoxins: aflatoxins (B1, B2, G1 and G2) and ochratoxin A in maize. The monitoring of mycotoxins in foods is extremely important for public health, aiming the adoption of technological measures in order to reduce exposure food considered at risk of these toxins, for this purpose will be collected commercial samples of popcorn and corn cereal for infant in supermarkets in the city of Piracicaba - SP and quantified with the methodology of better performance.
