Abstract This research plan will emphasize fundamental research in the adequation of banana pulp, cultivar Mysore, as raw material and processing (or processing parameters) to develop optimized products for both quality and nutritional aspects.The major goal of this project is to isolate non-starch polysaccharides from ripe banana cultivar Mysore, at laboratory and pilot-plant scales, with an adequate degree of purification, in order to use it as functional ingredient.
