Abstract

The aim of this study is to adapt a synbiotic aerated diet dessert - a mousse - from the previously developed formulation containing sucrose (BURITI et al., 2010a, b; KOMATSU et al., 2013), prepared with the addition or not (in the case of the control none-synbiotic formulation) of the probiotic Lactobacillus acidophilus La-5 strain and of prebiotic ingredients (inulin and oligofructose) and to evaluate the diet intake effects of the ingestion of this dessert in volunteer adults with metabolic syndrome over a period of 8 weeks of experiment through monitoring clinical, anthropometric, metabolic, and inflammatory parameters. For the product development, the survival of the probiotic culture during its frozen storage at-18 C will be assessed, as well as the counts of micro-organisms indicators of contamination, physico-chemical, instrumental texture and sensory features of the product throughout storage. The synbiotic diet mousse features during storage will be compared to those of the non-synbiotic diet product and to those of the product with sucrose previously developed and that will be produced for this purpose. For the clinical trial, the selected volunteers will be divided into groups of supplementation and placebo group, which will consume, respectively, synbiotic and non-synbiotic mousses. Blood pressure measurements and anthropometric parameters will be determined, besides the collection of blood samples before and after 0 and 8 weeks of intervention with the dairy desserts for the determination of biochemical and inflammatory markers, according to the double-blind placebo controlled experimental design. The results will be analyzed according to the statistical design proposed.
