Abstract

Living organisms are subject to oxidative stress caused by reactive oxygen species or other radicals produced by the metabolism causing a series of degenerative diseases like cancer, atherosclerosis and heart diseases. It has been shown that the consumption of antioxidant substances in the diary diet can prevent oxidative processes by the interruption of radical reactions, thereby minimizing early aging processes of the organism. In the last decades, the studies on the utilization of natural antioxidants to substitute synthetic derivatives in the alimentary and pharmaceutical industry have gained importance, due to the toxicity of some of the synthetic derivatives. In this project, the values of the antiradical capacity of several flavonoids will be determined utilizing the assays with the stable free radicals DPPH* and ABTS*+ as well as the chemiluminescent luminol/hemin/H2O2 system. The colorimetric assays will be performed in partially aqueous medium in order to be able to verify the influence of the protonation state of the flavonoid on its antiradical activity.
