Abstract

The presence of antibiotic residues such as sulfonamides in milk interferes with the manufacture of some dairy products, may cause allergic reactions in humans, as well as antibiotic resistance. The antibiotic metabolites residues can be even more hazardous and more persistent than the original compounds. Along the years the definition of ''residue'' of many contaminants have been modified and some regulatory agencies have been included the contaminant metabolites in their maximum residue limits (LMR). In this context residue monitoring of antibiotics and their metabolites in food sample is an important activity to guarantee the safety of food. In order to monitoring sulfonamides and their acetylated metabolites in milk samples to get separation efficiency and lower limit of the detection (LOD), studies will be undertaken employing high efficiency porous layer open tubular (PLOT) columns and also separation techniques coupled to tandem mass spectrometry in a nano -LC (PLOT) - MS/MS set up. After the analytical method development and validation the system will be employed in the analysis of sulfonamides in real food samples.
