Betalains are plant pigments that have been used on the development of fluorescent probes for application in Cellular Biology. Both the persistence of natural and semisynthetic betalains on aqueous media and the intracellular concentration of these compounds increase in thepresence of sucrose and other carbohydrates. In this doctorate project we propose: (i) the semisynthesis of aromatic betalains and glycosylbetalains and the study of their photophysical and hydrolysis properties; (ii) the functionalization of polysaccharides with betalains, using photoresponsive diamines as spacers. The results of this project will be important to establish structure-properties relationships of betalains, to develop glycosylbetalains useful as fluorescent probes, as well as to the development of new stimuli-responsive biomaterials.
