Abstract

Bacillus cereus is an important bacterium related to dairy supply chain in Brazil and other countries due technological failures during processment in dairy industries due lipolytic and proteolytic enzyms and also is considered a danger to public health due toxins action able to cause two distinct syndromes: diarrheal and emetic. This bacterium is also able to survive to some heat treatments used during milk processment. The genes related to the production of different toxins by this bacterium are already characterized in the literature, but there were not found studies which evaluated how the processment of pasteurized milk when contaminated with Bacillus cereus may affect the gene expression related to toxins production that causes both syndromes. In this context, this study is focused on to determine if milk pasteurization influences the gene expression related to the production of emetic and diarrheal toxins from Bacillus cereus using milk previously contaminated.
