Abstract

Fish consumption is growing because consumers are more and more seeking for healthy habits. However, fish is a highly perishable food, hinders the preservation of their quality and, consequently, making the freshness of the most appreciated features. The most satisfactory technique to assess the freshness is the sensory analysis, since it is the only method where consumer opinion may be considered. One of the sensory evaluation that has been used successfully for fish quality evaluation is the Quality Index Method (QIM). The results obtained by this technique allow linearly correlate sensory quality and storage time, thereby estimating the lifetime of certain species of fish. However, this technique is based only on quality assessment by trained judges. CATA (Check-All-That-Apply) and Word Association are sensory methodologies used for various types of food when one want to describe the food or product based on consumer ratings and to know the consumer perception of the food or product, respectively. These methodologies, combined with the QIM could make the assessments of the quality of species of fish most comprehensive and significant. This work aims to study the spoiling process and develop QIM scheme for flathead grey mullet (Mugil cephalus), a seawater fish of great commercial importance, and apply the methodologies CATA and Word Association for flathead grey mullet and matrinxã (Brycon cephalus), a freshwater fish for which a QIM scheme has already been developed.
