Lipid and protein oxidation of meat in feedlot cattle supplemented with selenium

Abstract

The objective of the study is to evaluate the effect of supplementation of different levels and sources of selenium in Nelore diet on lipid and protein oxidation of the meat. For that will be used 63 feedlot cattle to about 24 months old and 390 kg live weight, which will be submitted to one of the seven diets: (A) - control without additional supplementation of selenium; (B) - Control + 0.3 mg of Se/kg DM in the form of sodium selenite; (C) - Control + 0.9 mg of Se/kg DM in the form of sodium selenite; (D) - Control + 2.7 mg of Se/kg DM in the form of sodium selenite; (E) - Control + 0.3 mg of Se/kg DM in the form of organic selenium; (F) - Control + 0.9 mg of Se/kg DM in the form of organic selenium; (G) - Control + 2.7 mg of Se/kg DM in the form of organic selenium. TBARS and carbonyl concentrations will be evaluated on samples aged for 1, 14, 28 and 42 days, and also samples of Display Life on days 2, 4 and 6. The experimental design will be completely randomized type, with 9 replicates for each treatment. Statistical analysis will be performed using SAS (2004), at 5% significance level.
