Abstract

The indigestible oligosaccharides (NDOs) have received much attention since they have important biological properties promoting beneficial effects on health. Its ability to selectively stimulate the growth of bacteria of the intestinal microflora produces many health benefits such as improved immune system and decrease the proliferation of pathogenic microorganisms. Among the various ndos stand out oligosaccharides fructo-oligosaccharides and galacto recognized for their prebiotic property and emerging ndos obtained from the hemicelluloses (xylo-oligosaccharides and mannan-oligosaccharides) with potential prebiotic properties and bioactivities. In this sense, the development Enzymatic preparations which present activity, stability and selectivity, as well as the choice of inexpensive substrates are important for producing onds large scale as food supplement. Within this context the aim of this project is the production and enzyme immobilization (enzyme, xylanase and mannanase) on filter membranes, with the development of an enzymatic reactor membrane for the production of non-digestible oligosaccharides using as processing byproducts substrates of food. The study of fermentation of ndos obtained by microorganisms that produce butyrate present in the intestinal microbiota is another important goal, because the various bioactivities of butyrate and the scarcity of information about the stimulation of the growth of these bacteria by prebiotic compounds.
