Abstract

Milk and dairy products are sensitive to light exposure which leads to off-flavor development and reduced nutritional quality. Light-induced oxidation of milk and dairy products impact in the sensory acceptance of the product and reduce shelf-life. Riboflavin plays the major role in the photooxidation of important nutrients in milk and dairy products acting as type I photosensitizer. The reactivity of triplet excited riboflavin towards dairy products constituents are well reported, however the impact of redox inactive metal ions like Ca (II) and Zn (II) in the electron-transfer reaction has not been investigated in so far. Herein, we aim to understand the impact of redox-inactive naturally present metal ions in the reactivity of amino acids and peptides towards triplet excited riboflavin.
