Abstract

This research project aims at the development of an antimicrobial agent for the preservation of grains, fruits and nuts, contributing toimprove the competitiveness of Brazilian agribusiness, regarding the aspects of food safety and quality, with possible application on the conservation of commodities of high importance to the Brazilian trade balance. The proposal is grounded on an amphiphilic biofungicide patent(No BR102012023859) based on the polysaccharide chitosan and it has as main objective the synthesis and characterization amphiphilic derivatives diethylaminoethyl chitosan of high molecular weight (~ 300 kDa) and the preparation of biopolymeric films. Besides, in vitro studies of the derivatives against fungi that impacts the production and conservation of foods. Alternaria solani and Alternaria alternata, will be performed.In this project we intend to evaluate the physico-chemical and antifungal activity properties of these films and their efficiency as an active coating in food protection. The proposal is part of the FAPESP 2016/15736-0 research project. (AU)
