Abstract

An experiment will be carried out to evaluate the effects of the addition of passion fruit seed oil (OSM) on the diet of broilers, under the characteristics of meat quality and oxidation. A total of 1,680 1-day old male, Cobb 500, distributed in 56 boxes of 2,0 m2 with 30 birds each. The experimental design was a completely randomized design with seven treatments (positive and negative control and 5 inclusion levels of OSM in substitution of soybean oil: 0.10, 0.20, 0.30, 0.40 and 0.50%, and eight replicates. The parameters will be evaluated: color, pH, weight loss per cooking, loss of water by exudation, texture and water retention capacity 24 hours post mortem in 20 breasts per treatment, totaling 140 samples. Thiobarboturic acid (TBARS) on days 0, 30, 60, 90 and 120 post-slaughtering slaughter and storage under freezing. (AU)
