The Brazilian production of broilers developed in a complex economic sector aimed at maximum production of meat with the lowest cost and the creation of turkeys is evolving gradually and has become highly specialized. The growth performance has contributed to injuries in the carcasses of birds, such as Deep Pectoral Myopathy, which is considered a serious problem in poultry slaughtering lines. The aim of this study is to characterize the breast meat from broilers and turkeys affected by different degrees of severity of myopathy deep pectoral, as well to evaluate the influence of these myopathies on meat quality, so that the purchase intention by the consumer may be influenced. Will be used Pectoralis major samples from birds with different, reared and slaughtered in southeastern Brazil. Will be used Pectoralis major samples from broilers and turkeys, affected by deep pectoral in different severity degrees. Also will be used Pectoralis major samples remaining from carcasses of broilers and turkeys, affected by deep pectoral myopathy, and that have been released for human consumption by the Federal Inspection Service. Will be evaluated color, pH, water holding capacity, cooking weight loss, shear force, lipid oxidation, sarcomere length, collagen, chemical composition, cholesterol and fatty acid profile evaluation. To evaluate the quality of each studied species of poultry (chicken and turkey) will be used a completely randomized design (CRD) in a 2x3 factorial (two lines and three degrees of severity of myopathy by category) according to the study incidence of lesions. The results will be submitted to analysis of variance and the means compared by Tukey test with significance set at p <0.05.
