Abstract

Swine are important constituents of the human diet, occupying the second place in the ranking of the most consumed in the world, however, the technology of intensive animal production allows the emergence of infectious diseases. The use of probiotic microorganisms and their biomolecules, such as bacteriocins, in the prevention and treatment of bacterial infections in animals intended for human consumption, such as swine, has been considered as an efficient alternative to the use of antimicrobials. In this context, the present project has as main objective the bioprospecting of bacteriocinogenic probiotic lactic acid (BAL) bacteria, present in the intestinal microbiota of swine (Sus scrofa domesticus). For this purpose, biochemical and molecular identification of isolated probiotic bacteria will be performed and the cell-free supernatant will be used in order to evaluate the production, the peptide nature and the antimicrobial power of bacteriocins against Escherichia coli, one of the main swine pathogens. The results obtained will make it possible to identify new safe probiotic strains for use in animal feed, as well as effective bacteriocins to combat pathogenic bacteria.
