Abstract

The lack of technologies that enable the in natura conservation of uvaia, grumixama and Rio-Grande cherry puts at risk the exploitation of the commercial potential of these fruits. One of the most effective technologies for the conservation of horticultural products is refrigeration, which aims to reduce the speed of metabolism of the fruit, without causing damage. Thus, this work aims at the post-harvest conservation of these fruits, focusing on the conservation through the use of refrigeration. The fruits will be selected for the absence of defects, placed in trays and stored at 5 ºC, 10 ºC, 15 ºC and 22 ºC (Control) and relative humidity of 90 ± 5% until they reach senescence. They will be characterized for the following attributes: fresh mass loss, color, firmness, soluble solids, total soluble sugars and titratable acidity. The statistical design will be entirely randomized, in a factorial scheme, with three repetitions of ten to fifteen fruits per treatment. The results will be submitted to variance analysis and the means will be compared using Tukey's test (5%). Non-parametric variables will be analyzed by the Kruskal-Wallis test (5%).
