Abstract

Food additives are increasingly present in foods due to their technological ability to maintain the level of quality of various products. However, to ensure that these ingredients are safely consumed, it is necessary to conduct population exposure studies. Additives intake is estimated based on food consumption data and concentration levels in the products. Although some studies of exposure to food additives conducted in Brazil have already been published, intake estimates performed with a large number of additives using conservative approaches for screening purposes and identification of the need for refinement of the data were not found in the literature. Thus, this work will perform an assessment of the exposure of the Brazilian population above 10 years old to food additives through the consumption of food and beverages. Food consumption data will be provided by the Household Budget Survey 2017-2018, while regulatory maximum limits will be used as additive concentration data. The calculations will be performed using the deterministic method and the results will be compared to the Acceptable Daily Intake (ADI) of the substances for the characterization of the health risk.
