Abstract

The sustainable extraction of bioactive compounds from beet leaves and roots can be an alternative to the reduction of environmental impacts of the agri-food sector. The leaves and roots from beet processing can produce higher value-added compounds such as betanin and vitexin, which have antioxidant, anti-inflammatory, and anticancer properties. In addition, the recovery of value-added bioproducts for application in the pharmaceutical and food industries supports biorefinery development. In this project, the optimization of the green extraction method of betanin and vitexin using supercritical extraction will be carried out. Supercritical fluid extraction is considered an ecological and sustainable technique, and nutraceutical applications could produce a physiological benefit or provide some protection against chronic disease. In this context, this project can support the development of new sustainable extraction method, and liposome formation will contribute to nutraceutical applications. (AU)
