Abstract The transformations and absorption of carotenoids in the colon still represent a significant gap in understanding the fate of these compounds in the gastrointestinal tract, knowledge that is essential for the mechanisms of action in NCDs to be elucidated more clearly. This project aims to identify carotenoids and their metabolites after in vitro digestion of peach palm flour and extruded snacks in the bioaccessible fraction and undigested fraction after colonic fermentation through a metabolomic approach. For this purpose, the work plan abroad includes the activities that will be carried out in 2 months. To enable these activities, in vitro digestion and colonic fermentation will be carried out in Brazil, and the fractions will be collected and transported to the laboratory in Spain for analysis. This project is related to the current regular project coordinated by the proponent: "Amazonian fruit peel (tucumã and peach palm) as low-cost functional ingredients with high nutritional value" (2022/09998-3). | |
