Dietary Guideliness for the Brazilian Population and the Human Right to Adequate and Healthy Food in Solidarity Kitchens: the case of the Panela Aberta Project as a Food and Nutritional Education strategy

Abstract

Given the food and nutritional situation in Brazil, in which the national prevalence of food and nutrition security reached its lowest level (44.8%) in recent decades in 2021, coupled with the importance of adequate dietary patterns for positive health outcomes and the construction of society, the importance of developing strategies to promote adequate and healthy eating within the scope of the social assistance is justified. The objective of this study is to evaluate the effectiveness of a Permanent Education program in Solidarity Kitchens, based on the validation of workshops from the Panela Aberta extension project, which is based on the Dietary Guidelines for the Brazilian Population. Prospective study, with a quantitative-qualitative approach, descriptive, analytical and applied, uncontrolled, pre- and post-intervention type, translational with a national sample composed of dietitians and solidarity kitchen workers, in urban and rural contexts. The variables of interest in the present study address: a) the knowledge of dietitians about the guidelines of the Dietary Guidelines for the Brazilian Population; b) self-efficacy, understood as the dietitian's perception of confidence in providing guidance based on the Dietary Guidelines in Solidarity Kitchens; and c) practices of Unified Social Assistance System professionals based on the understanding of the solidarity kitchens as promoters of the Human Right to Adequate and Healthy Food. Data on knowledge, self-efficacy and collective efficacy will be collected by completing self-administered scales, previously validated; The Student's t-test for paired samples or the Wilcoxon test will be used, depending on the nature and distribution of the variables observed. To evaluate the effectiveness of the program, regression models will be used. It is expected to evaluate whether workshops with the Panela Aberta method are effective for Permanent Education with a focus on Food and Nutritional Education for workers and dietitians working in solidarity kitchens throughout the national territory with regard to the promotion of an adequate and healthy diet. The proposed structure could also serve as a model for other professionals who work in the social assistance system and food and nutritional security.
