Abstract

The Amazon region boasts significant environmental diversity and potential for the differentiated production of canephora coffees, representing a relevant activity for both family farming and the promotion of indigenous peoples. Therefore, this undergraduate research project aims to characterize the volatile chemical composition of raw and roasted canephora coffees grown in the Legal Amazon, including Rondônia, Acre, and Amazonas, using gas chromatography-mass spectrometry (GC-MS), optimizing sample preparation conditions and the analysis and identification methods. The aim is to highlight regional similarities and differences, revealing chemical aspects that may contribute to the valorization of Amazonian coffee production. The data obtained will be processed through multivariate analysis, with emphasis on principal component analysis (PCA), which will allow us to explore global patterns and natural clusters among the samples. Furthermore, the Common Dimensions (ComDim) integrated data analysis approach is expected to be used to integrate data obtained from raw and roasted coffees, establishing relationships between volatile compounds before and after roasting and expanding understanding of the chemical transformations associated with roasting. Expected results include the identification of relevant chemical markers, the differentiation between coffees from different Amazonian origins, and the generation of scientific knowledge that strengthens strategies for valuing and promoting the quality of coffees from the Amazon region.
