Abstract

Vegetal foods present phytochemicals such as soy isoflavones with health-promoting biological effects (antioxidant, antinflammatory and hypocholesterolemic). Although soybeans are typical from Oriental diets, the consumption has been growing significantly in the Occident, as has also the consumption of organic foods. The objectives of this project are to compare the isoflavone and total phenolics contents and the antioxidant capacity among conventionally and organically grown soybeans cultivated in the farm of the University of Pelotas, 2008/2009 crop, respecting the conditions determined for each.
