Food Scientist from the University of São Paulo (USP / ESALQ). Received the awards Luiz de Queiroz, ADEALQ and Lavoisier in the graduation by the best academic performance of the year. He became a Master in Chemistry in Agriculture and Environment and Doctor in Science and Technology of Food also by USP. He began his scientific activities at the undergraduate studies, working with an advanced analysis of the nutritional composition of foods, highlighting the analysis of B vitamins by HPLC-FD and the bioavailability of minerals by in vitro simulation of human digestion. He was a visiting researcher at Ohio State University, USA, working with the in vitro simulation of digestion coupled to human intestine cells culture (Caco-2) to evaluate the bioavailability and absorption of carotenoids from biofortified cassava. He applied these techniques to evaluate the profile and bioavailability of carotenoids from eleven native and exotic fruits from Brazil. He went to the University of Minho, Portugal, where he evaluated the behavior of Brazilian native fruit microemulsions in a dynamic simulator of the gastrointestinal system, focusing on the stability and bioavailability of carotenoids. He was professor at the Methodist University of Piracicaba for 2 years and was honored in 2018 by his students. He currently carries out research activities at the São Paulo State University (UNESP) working with a Simulator of the Human Intestinal Microbial Ecosystem (SHIME). (Source: Lattes Curriculum)
