Shiga toxin-producing Escherichia coli (STEC) strains can cause hemorrhagic colitis and hemolytic uremic syndrome by producing Shiga cytotoxin (Stx), a toxin that inhibits protein synthesis by acting on rRNA, leading to cell death.
