The present invention relates to the method for extracting and isolating active substances from umbu pulp (Spondias tuberosa Arr. Camara). Besides high acetylcholinesterase inhibitory activity, the active substances also exhibit powerful antioxidant activity. In view of their properties, the fractionated extract and the active principles obtained by the claimed method can be used in nutraceutical and/or functional foods or in cosmetics. In the form of foods, the active principles are used for the treatment of neurodegenerative diseases. In the form of cosmetics, the active principles are used against ageing.
