The search for plant-based products is increasing, becoming necessary to increase the supply of high-quality products and improve those already available. The structure and texture of these products is greatly affected by the gel forming ability of plant proteins. Therefore, the objective of this study was to evaluate three processes to obtain pea protein gels crosslinked with transglutaminase (TGase) for varied food applications. In Process 1 (P1), 15% (w/w) of pea protein and TGase (0.5, 0.75, 1 or 1.25% w/w) were mechanically homogenized, incubated at 50 degrees C for 30 min and, subsequently, heat treated at 80 degrees C for another 30 min. In processes 2 (P2) and 3 (P3), before the incubation at 50 degrees C for 30 min, the pea protein was first solubilized by heat treatment at 80 degrees C under mechanical stirring, or with an ultrasound probe for 30 min, respectively. P1 and P2 formed selfsupporting gels, while P3 gels had a viscous consistency. In all treatments, the microstructure analysis showed that the increase in the enzyme concentration induced greater protein aggregation. Regarding mechanical properties, P1 gels did not fracture, while the P2 ones showed a tendency for Young's Modulus to increase with increasing enzyme concentration and the sample treated with 0.5% (w/w) enzyme was the most deformable. P2 samples had a greater water retention capacity when compared to the P1 gels. Therefore, all processes were able to form gels with different mechanical and microstructural characteristics that could be used for varied food applications. (AU) | |
