Resumo

An in-depth investigation into the development, characterization, and 3D printability of carotenoid-incorporated bigels was undertaken. The bigels were prepared by combining an agar-xanthan gum Hydrogel (HG) and beeswax-sunflower oil Oleogel (OG) under controlled temperature and shear conditions. Four different formulations (F1-F4) with three different OG: HG ratios and the addition of saponified and non-saponified pequi carotenoids were examined. Results indicated that the self-supporting capacity of the layers depends on the OG: HG ratio, the structuring agents (including the presence of the emulsifier soy lecithin), and the addition of carotenoids. Formulation 3, without soy lecithin, exhibited excellent printability with minimal dimensional printing derivation, but showed instability in printed parts when non-saponified carotenoids were added in the 80% OG bigel. The inclusion of soy lecithin into bigels formulation (F4) enhanced the 3D printability for both saponified and non-saponified carotenoids. FTIR results suggested that all bigels were physical mixtures of OG and HG phases, while XRD analysis confirmed the crystalline structures of beeswax. Rheology analysis demonstrated shear-thinning behavior, facilitating smooth extrusion, excellent thixotropy for maintaining structural integrity and a suitable storage modulus for self-supporting during 3D printing. Microstructural analysis revealed a bicontinuous structure in most bigels. 3D-printed parts were classified as Level 4 (pureed and extremely sticky) according to the International Dysphagia Diet Standardization Initiative, making them suitable for individuals with swallowing difficulties. This study provides valuable insights into the development of 3D printable bigels with incorporated lipophilic compounds, as carotenoids, paving the way for innovative food applications. (AU)
