Resumo

The sustainable development of processes for obtaining natural food colorants to replace synthetic ones still presents significant challenges. This study developed two whey protein aqueous suspension-based processing strategies for producing genipin-derived blue pigments from unripe Genipa americana L. fruits. Route A evaluated the thermal-assisted genipin extraction followed by the cross-linking reaction. Route B examined the mechanical extraction of genipin and its cross-linking reaction through thermal or ultrasound-mediated pigment formation. Additionally, exhaustive extraction of genipin from genipap was verified, evaluating three extraction cycles. Both routes produced intense blue pigments in the first two cycles. The ultrasound-assisted cross-linking in Route B accelerated pigment formation and yielded slightly deeper blue hues compared to thermal treatment. All first-cycle pigments retained >95% of their absorbance across pH 2-7. The sustainability assessment scored both routes positively (overall > 0), indicating alignment with sustainable process goals. (AU)
