Resumo

Bigels have recently gained attention as effective systems for structuring edible matrices, with the aqueous phase playing a critical role in determining their structural properties. This study investigates gelatin and potato starch as gelation hydrogelators in the aqueous phase of bigels, focusing on their rheological, mechanical, thermal, and microstructural characteristics. Both bigels exhibited initial yield stresses (71.40 Pa for gelatin-based bigel and 66.77 Pa for potato starch-based bigel). The potato starch-based bigel demonstrated higher surface tension (100 Pa) and maintained structural stability at elevated temperatures (similar to 60 degrees C). The 8.5 % potato starch hydrogel (PSH) demonstrated superior thixotropic recovery (91.38 %) under shear stress, attributed to its resilient three-dimensional network, making it more suitable for stress-tolerant applications compared to gelatin-based hydrogels. X-ray diffraction analysis revealed a crystalline peak in the gelatin-based hydrogels (similar to 7.5), indicating an organized and denser structure. In contrast, the PSH exhibited amorphous characteristics with a broad peak at similar to 18 degrees 2 theta. The microstructural analysis highlighted a porous structure in the PSH, contributing to its consistent behavior across varying frequencies and temperatures. These results support potato starch as a viable alternative to gelatin for developing stable, structurally, and thermally resistant bigels, offering a sustainable and effective solution for diverse food applications.
