Abstract

Brazil is the world's largest coffee producer, with a volume equivalent to half of the world's Arabica beans, most consumed and tasty, being exported to more than 120 countries. Brazilian domestic market is the world's second largest consumer of coffee and producer of crops with exceptional flavors and aromas, there is a gap in the development of beverage-based specialties in the country. Recent discoveries about the functional benefits of coffee are some of the factors that strengthen the need to search for processing alternatives and pave the way for new opportunities in the exploration of beverage potential. The aim of this project is to enable the production, on a laboratory scale, of a coffee extracting method at controlled temperatures, in order to enhance its functional and sensorial characteristics. This model is intended to provide a new fluid product in the market, which combines practicality with functionality, further enhancing the Brazilian coffee quality perception and the country's technology potential, since it is a product developed with Brazilian grains and fully national processing technologies.
