Abstract

The characteristics of dairy products favor the multiplication of spoilage microorganisms and pathogens, which can generate numerous damage to companies and public health. Processes such as pasteurization can cause sensory and nutritional changes, generating the need for alternative methods. Thus, our solution comprises a method of food preservation through the application of cold plasma, aiming at increasing shelf life and reducing losses due to contamination. (AU)
