Cyclodextrin glucanotransferase (CGTase, EC is an enzyme capable of forming cyclodextrin as a final product, using soluble starch as the main substrate. It is an enzyme that has been acquiring industrial interest, due to increased application of cyclodextrins in food and pharmaceutical industries. The importance of the cyclodextrins use in various sectors, mainly to the food industry, is due to its characteristic of molecular encapsulation. So, it is proposed the isolation of strains producing CGTase in the region of Ilha Solteira, SP. Sample soil will be collected in different environments, especially in areas of the Cerrado vegetation, in the area around Ilha Solteira. Then, the isolates will be evaluated for potential production of CGTase, using soluble starch as a carbon source. After selecting, the strains with potential for CGTase production, production test will be conducted. For these tests will be used other sources of starch or agro-industrial residues, as an alternative that allows for the reduction of the cost of enzyme production. Then tests are carried out optimization of the culture medium. So, physicochemical characterization of the enzymes of interest and characterization by chromatographic analysis of the CD type were realized.
